Coconut Milk and Cinnamon Flavored Soaked Oats With Chia Seeds

Ingredients:

  • 3 cups of rolled oats

  • 1 cup of light coconut milk

  • 3 cups of almond milk or 2% milk

  • ½ cup of shredded coconut

  • ½ teaspoon of ground cinnamon

  • ½ teaspoon of vanilla extract

  • 2 tablespoons of brown sugar

  • ½ cup of organic Chia seeds

  • ¼ cup of dried cranberries

  • 2 cups of water to dilute as needed

Directions:

  • Mix all the above ingredients in a large microwavable bowl.

  • The water should be added only if the mixture still seems dry and the oatmeal should be completely submerged about ½ inch under the liquid.

  • Leave this mixture to soak overnight in the refrigerator.

  • When ready for breakfast, microwave the mixture on high for 2-3 minutes and set aside.

  • While serving, you can add additional almond milk or whole milk to loosen the oats.

  • Serve with a garnish of shredded coconut and enjoy!
