Spicy Braised Cauliflower and Shrimp in Tomato Sauce
Ingredients:
1 head of cauliflower cut into small florets – steamed for 10 min and set side
1 pound of cocktail shrimp- cleaned and deveined (frozen shrimp can be used after defrosting)
1 can of diced and peeled tomatoes
1 onion - diced small
1 head of garlic - peeled and minced
1 teaspoon of chili powder
Salt to taste
1 tablespoon of sesame oil
1 teaspoon of ground organic turmeric
Procedure:
In large nonstick sauté pan heat the oil and add the onions, tomatoes, and garlic till incorporated for about 5-10 minutes.
Add the shrimp, chili powder, and turmeric. Sauté till the shrimp is cooked, and at this point, add the cauliflower and sauté over a high heat.
Cover and cook for an additional 5 minutes, then allow the water to evaporate till the sauce is thickened and intermingled with shrimp and cauliflower.
Serve hot with bread, roti, naan, or steamed brown or white rice.
