Quinoa with veggies is a versatile dish. It is vegetarian, yet loaded with spices, vitamins, minerals, and protein. It is relatively low carbohydrate and excellent served with some Raita or Korma. The nuttiness of the Quinoa is a delight to your tastebuds!
Ingredients:
Organic Quinoa, 2 cup
Onions, raw, 1 cup, chopped
Pepper, red or cayenne, 1 tsp
Ginger Root, 1 tsp minced finely
Cauliflower, 1 cup - small florets
Red pepper, 1 cup chopped
Sesame Oil, 1 1tsp
Cilantro raw, 2 tbsp
Garam masala, 1 tsp
Salt to taste
Method:
Dry roast Quinoa over moderate heat for 5 minutes - this will impart a nutty flavor to it, and set aside.
Heat oil in sauce pan over light heat for 1-2 minutes.
Add minced ginger, sauté lightly and add onion, cayenne, garam masala and sauté for an additional 5 minutes.
Add cauliflower florets and red pepper and sauté for 5 minutes.
Add quinoa and sauté mixture for 5 minutes, add salt and two cups of boiling water.
Cover and simmer for 10 minutes, then turn off heat and allow to steam.
