Indian style Atlantic Salmon Puttu

Ingredients:

2 pounds Atlantic Salmon - boneless skinless

1 teaspoon whole black pepper

2 inches ginger minced fine & 1 inch ginger minced fine

1 tablespoon low sodium Soy sauce

1 Jalapeño sliced thin & 1 Jalapeño minced fine

1 teaspoon Turmeric

1/2 teaspoon Garam masala

1/2 teaspoon ground black pepper

1- 2 teaspoon Sesame oil

4 cups water

Salt to taste

1 large onion sliced thinly

1 cup finely sliced cilantro leaves

1 sprig curry leave julienned

Directions:

  • Boil water and add the whole black pepper, 2 inches fresh ginger minced, Low sodium Soy sauce,1 jalapeño sliced thin into the water and allow to simmer for 30 minutes.

  • Gently submerge the Salmon in water with spices and allow to poach and cook. Turn off the heat and allow to rest for 1 hour

  • Drain Salmon and shred with a fork and add Turmeric, Garam masala, ground black pepper and salt to the Salmon and mix thoroughly and set aside

  • Heat oil in large nonstick pan

  • Add the curry leaves, sliced onions,1 inch minced Ginger and minced Jalapeño

  • When the onions are gently browned add the shredded Salmon mix, gently cook and lightly brown over medium low heat

  • Add the Cilantro and cover with lid and allow to steam after turning off heat.

    Salmon is a great source of protein and omega 3 fatty acids. I created this dish with Indian spices and an Asian flare. The poaching liquid with spices penetrates the flavors into the Salmon, thereby elevating the tasting experience. I like to serve this over a simple salad or as an accompaniment to Naan, Paratha, Rice or vermicelli. I hope you enjoy this dish and live Long and Strong!
