Indian style Atlantic Salmon Puttu
Ingredients:
2 pounds Atlantic Salmon - boneless skinless
1 teaspoon whole black pepper
2 inches ginger minced fine & 1 inch ginger minced fine
1 tablespoon low sodium Soy sauce
1 Jalapeño sliced thin & 1 Jalapeño minced fine
1 teaspoon Turmeric
1/2 teaspoon Garam masala
1/2 teaspoon ground black pepper
1- 2 teaspoon Sesame oil
4 cups water
Salt to taste
1 large onion sliced thinly
1 cup finely sliced cilantro leaves
1 sprig curry leave julienned
Directions:
Boil water and add the whole black pepper, 2 inches fresh ginger minced, Low sodium Soy sauce,1 jalapeño sliced thin into the water and allow to simmer for 30 minutes.
Gently submerge the Salmon in water with spices and allow to poach and cook. Turn off the heat and allow to rest for 1 hour
Drain Salmon and shred with a fork and add Turmeric, Garam masala, ground black pepper and salt to the Salmon and mix thoroughly and set aside
Heat oil in large nonstick pan
Add the curry leaves, sliced onions,1 inch minced Ginger and minced Jalapeño
When the onions are gently browned add the shredded Salmon mix, gently cook and lightly brown over medium low heat
Add the Cilantro and cover with lid and allow to steam after turning off heat.
Salmon is a great source of protein and omega 3 fatty acids. I created this dish with Indian spices and an Asian flare. The poaching liquid with spices penetrates the flavors into the Salmon, thereby elevating the tasting experience. I like to serve this over a simple salad or as an accompaniment to Naan, Paratha, Rice or vermicelli. I hope you enjoy this dish and live Long and Strong!
