This is an excellent high protein dish, prepared keeping health in center focus with a low fat
approach and an emphasis on flavor.
Ingredients:
Lamb, Cubed, 16 oz
Onions, raw, 2 cup, chopped
Tomatoes, red, ripe, raw, 4 medium whole
Cumin seed, 1 tsp
Coriander seed, 1 tsp
Cayenne 1 tsp
Turmeric 1 tsp
Cinnamon ground 1 tsp
1 Cinnamon stick
Garlic, 10 cloves
Cilantro, raw, 4 tbsp
Coconut, raw, 1/4 cup, shredded
Sesame Oil, 1 tbsp
Instructions:
1.Heat oil in pressure cooker without lid for 2 minutes.
2.Add garlic , cayenne, ginger and onion and sauté till lightly brown.
3.Add ground cumin, cinnamon, coriander, cinnamon stick and cayenne and sauté for
5 minutes.
4.Add cilantro and lightly sauté for 2 minutes.
5.Add lamb cubes and sauté for 10 minutes till lightly brown.
6.Separately grind coconut and tomatoes in blender and add to sautéed mixture .
7.Place lid on pressure cooker and cook for 25 minutes on medium heat.
Salt to taste.
