Glazed Scallops with Tamarind Sauce
Ingredients:
Fresh Scallops - cleaned and ready to go
Black Ground pepper - 1 tsp
Garam Masala - 1/4 tsp
Turmeric - 1 pinch
Fresh Cilantro to garnish
Sesame oil - 2 teaspoons
Salt to taste
Sauce:
Tamarind pulp 1 tbs
Sriracha 1 tsp
Low Sodium Soy Sauce 2 tsp
Organic Agave 1 tsp
Ketchup 1 tbs
Directions:
After cleaning the Scallops, marinate in Black Pepper, Garam masala, and Turmeric.
Drizzle 1/2 tsp of Agave over the Scallops
Set the Scallops aside in the refrigerator for 10 minutes to soak in the spices
Sauce: Mix together the Tamarind pulp, Sriracha, Soy Sauce, Ketchup, and Agave and set aside
Cooking the Scallops: Heat the oil in a nonstick pan to the point that the pan is mildly smoking, at this point, sear scallops for 1 1/2 minutes on each side until firm and opaque.
The Agave will add to the caramelization over the surface of the scallops.
It is important to note that the cooking time may vary depending on the size of the scallops.
Serve with the sauce garnished with Cilantro.
